Bedford County entrepreneur unveils new food truck

Jackie’s Groovy Cheese Truck unveiled a brand-new truck at an official ribbon cutting Tuesday morning in Bedford County.

Owner Jackie Lacroix says that the idea for her business was brought on during the beginning of COVID-19 shutdowns, when curbside food pickups were the only dining option outside of the house.

With a tie-dye food truck in mind, she sought to combine her love for food and all things groovy.

Due to a high demand for menu items like grilled cheese, mac and cheese, and loaded tater tots, Jackie’s husband George Page stepped in to help run the window operations of the truck.

Jackie says that the business grants her the opportunity to give back to her community through fundraisers and donations.

“It’s been nice because we’ve been able to help bring attention to the Bedford County Humane Society and Abby’s Angels Animal Haven. Those are two great organizations that help animals in need and that are really important to me. We’ve also been able to help out with different schools and churches that we’ve gone to.”
